Red Velvet Cuppies.

I made red velvet cuppies yesterday and it was a hit among my family and a friend. I gave about twelve cuppies to Nisahk and she tweeted that she had all twelve to herself.

I believe in sharing. I may not be able the share the cuppies with you but I am more than happy to share the recipe. Haha.

Ingredients:

  • 250g butter
  • 250g sugar
  • salt
  • 250g flour (sifted)
  • 4 eggs
  • 2 teaspoons vanilla essence
  • 2 tablespoons cocoa powder
  • 5 tablespoons red food colouring
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon bicarbonate soda
  • 1 and 1/2 cup of milk
  • 1 tablespoon lemon juice

Cream Cheese Frosting:

  • 250g cream cheese
  • 50g butter
  • 3 tablespoons icing sugar
  • 2 teaspoons vanilla essence
  • salt
  • 4 tablespoons milk
  • roasted almonds

First, beat butter, sugar and salt in a mixer until soft and fluffy. Then, add in the egg one by one, mixing through after each egg. In a different bowl, mix together cocoa powder, vanilla essence and red food colouring. Add in to the first mixture and mix through. Put the lemon juice into the milk and let it sit for a while. With the mixer on low speed, alternately add the flour and milk mixture to the butter mixture, in three additions. In a small bowl, combine apple cider vinegar and bicarbonate soda. Add to cake mixture and mix through. Fill cupcake cups with cake batter until they are a little under 3/4 full. Bake in a preheated oven (170 °C) for about 10-15 minutes.

For the frosting, beat cream cheese, butter, salt and icing sugar until they are smooth and fluffy. Add the milk bit by bit and continue beating until the mixture is mixed well. Let the cuppies cool before putting the frosting on top. Dice the almonds and scatter on top of the frosting.

There you have it. My version of red velvet cuppies. Happy trying! 😀

To get to the heart…

…is through the stomach. Haha.

In the two years of my stay in Sandakan, I received three parcels from Azwan. All of them were food. Haha.

It was after one month being in Sandakan when he sent me Parcel Number One. I was staying alone most of the time and I often complained about being lazy to cook just for one and how I wished that I have a few thing which I can reheat whenever I feel like eating.  I told him that I couldn’t find any Brahim stuff here so he told me that he was willing to send me some. He got me about of 10 Brahim’s  rendang / kari daging and ayam, Brahim’s masak lemak gravy and Brahim’s asam pedas gravy. So while he’s at it and wanted to bermanja, I requested for some other things too. In the end Parcel Number One not only contains those Brahim stuff but also a big container of kuih bahulu, Adabi’s perencah nasi goreng, tepung goreng Kentucky, serunding daging, preserved slice prunes, Famous Amos cookies and Grey’s Anatomy the series.

Then a few months later, I was craving for some Famous Amos cookies. So he sent Parcel Number Two which contains 100g chocolate chip with pecan cookies, 100g double chocolate chip cookies and some Lindt chocolates.

When I lost my first iPhone early this year, I had to suspend my account for fear of misused by the person who’s having my phone. So since my account is registered using Azwan’s name, he was the one who had to go to Maxis in order to get the new simcard. Coincidently, I wanted to have some sushi. So in the end, not only Parcel Number Three has the simcard, but also the sushi rice and the green seaweed thing.

I guessed when people say, ‘The best way to get to the heart, is through the stomach’ is somewhat true and applicable.

Haha. :p

English Tea House and Restaurant.

Whenever Azwan is in Sandakan, one place that we surely go to is the English Tea House. It is situated on top of a hill in the surrounding of the Agnes Keith House Museum.

“The English Tea House is superbly situated within the grounds of the historic Agnes Keith House Museum and is housed in a meticulously renovated colonial house surrounded by 1.5 acres of perfectly manicured lawns.”

What I really love is the atmosphere around the tea house. It was really calm and cool as it is surrounded by trees and you could hear birds chirping. From the tea house, you could see the streets, the town and the bay of Sandakan. Being there, reminds me of UK. A lot.

Main reason was that the tea house serves scones. Yippy yay! Scones is one of my favourite tea time snacks apart from karipap, kuih lopes, kuih seri muka and what not. Let’s not go there, shall we ha ha ha. They serve them in sets called the English Tea Set where you can get two scones, with cream and strawberry jam aside, and a pot of tea or coffee at a price of RM18.00. Or if you just want only one scone, they have another set, without the tea at RM6.50.

They also serve different types of cakes, sandwiches and desserts. Not only that, they also have ala-carte menu which includes Asian specialties, soups, pasta, sandwiches and other main course.

Allergy Test Result.

After a week and a half of waiting, I have finally gotten my allergy test result from the respective Pathlab. I don’t know whether to laugh or to cry upon hearing the result. Well, it’s more than just chicken. I am also allergic to soybean, milk, egg, shrimp, crab, clam, tuna, beef, citrus mix (a mix of citrus fruits), wheat and peanut. Not only that, I am also allergic to cats, dogs, cockroach mix, mite, housedust, latex, a few types of fungi and grass.

For someone who enjoys food very much, I found this hard especially in having to refrain myself from eating what I like to eat. Becoming a vegetarian is probably the best option. But I am not tempted at all with the vegetable meals here in IPBA. I would rather eat chicken or shrimp and then take my medication.

Not good. Relying on medication is not good, especially when you already know your allergens. Plus, the doctor already mentioned that one of those he prescribed contained steroid. The best thing to do is to avoid the allergens. But……. Ok. Ok. No but here. I’m just in denial and not ready to become a vegetarian. Huks.

Guess I will definitely not win in the reality show Fear Factor if they ask me to eat cockroaches. Well, asking me to pat a cat or put on the yellow rubber gloves will also result in the same thing. Haha.

Chicken is a no.

I guess it is official now that I am allergic to chicken. Not the live ones, but the cooked ones. Blergh.

I had three allergic reaction within five days, and all of them happened after a few hours of eating chicken. Rendang ayam, ayam percik, ayam goreng and ayam KFC. Blergh.

I can see some chicken doing the ever famous chicken dance. Bwak bwak bwak bwak.
