Red Velvet Cuppies.

I made red velvet cuppies yesterday and it was a hit among my family and a friend. I gave about twelve cuppies to Nisahk and she tweeted that she had all twelve to herself.

I believe in sharing. I may not be able the share the cuppies with you but I am more than happy to share the recipe. Haha.

Ingredients:

  • 250g butter
  • 250g sugar
  • salt
  • 250g flour (sifted)
  • 4 eggs
  • 2 teaspoons vanilla essence
  • 2 tablespoons cocoa powder
  • 5 tablespoons red food colouring
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon bicarbonate soda
  • 1 and 1/2 cup of milk
  • 1 tablespoon lemon juice

Cream Cheese Frosting:

  • 250g cream cheese
  • 50g butter
  • 3 tablespoons icing sugar
  • 2 teaspoons vanilla essence
  • salt
  • 4 tablespoons milk
  • roasted almonds

First, beat butter, sugar and salt in a mixer until soft and fluffy. Then, add in the egg one by one, mixing through after each egg. In a different bowl, mix together cocoa powder, vanilla essence and red food colouring. Add in to the first mixture and mix through. Put the lemon juice into the milk and let it sit for a while. With the mixer on low speed, alternately add the flour and milk mixture to the butter mixture, in three additions. In a small bowl, combine apple cider vinegar and bicarbonate soda. Add to cake mixture and mix through. Fill cupcake cups with cake batter until they are a little under 3/4 full. Bake in a preheated oven (170 °C) for about 10-15 minutes.

For the frosting, beat cream cheese, butter, salt and icing sugar until they are smooth and fluffy. Add the milk bit by bit and continue beating until the mixture is mixed well. Let the cuppies cool before putting the frosting on top. Dice the almonds and scatter on top of the frosting.
