Red Velvet Cuppies.

I made red velvet cuppies yesterday and it was a hit among my family and a friend. I gave about twelve cuppies to Nisahk and she tweeted that she had all twelve to herself.

I believe in sharing. I may not be able the share the cuppies with you but I am more than happy to share the recipe. Haha.

Ingredients:

  • 250g butter
  • 250g sugar
  • salt
  • 250g flour (sifted)
  • 4 eggs
  • 2 teaspoons vanilla essence
  • 2 tablespoons cocoa powder
  • 5 tablespoons red food colouring
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon bicarbonate soda
  • 1 and 1/2 cup of milk
  • 1 tablespoon lemon juice

Cream Cheese Frosting:

  • 250g cream cheese
  • 50g butter
  • 3 tablespoons icing sugar
  • 2 teaspoons vanilla essence
  • salt
  • 4 tablespoons milk
  • roasted almonds

First, beat butter, sugar and salt in a mixer until soft and fluffy. Then, add in the egg one by one, mixing through after each egg. In a different bowl, mix together cocoa powder, vanilla essence and red food colouring. Add in to the first mixture and mix through. Put the lemon juice into the milk and let it sit for a while. With the mixer on low speed, alternately add the flour and milk mixture to the butter mixture, in three additions. In a small bowl, combine apple cider vinegar and bicarbonate soda. Add to cake mixture and mix through. Fill cupcake cups with cake batter until they are a little under 3/4 full. Bake in a preheated oven (170 °C) for about 10-15 minutes.

For the frosting, beat cream cheese, butter, salt and icing sugar until they are smooth and fluffy. Add the milk bit by bit and continue beating until the mixture is mixed well. Let the cuppies cool before putting the frosting on top. Dice the almonds and scatter on top of the frosting.

There you have it. My version of red velvet cuppies. Happy trying! 😀

I’ve been on hiatus for more than 2 months now.

I have so many things to write about but I just couldn’t tune myself into the writing mode.

Maybe later.

After I’m done with my current project. Which is sewing beads on my baju kurung modern to be worn at a relative’s wedding in Johor on the 12th of Dec.


It is rather important to get this one done quickly because I don’t have such patience especially in sewing.

To get to the heart…

…is through the stomach. Haha.

In the two years of my stay in Sandakan, I received three parcels from Azwan. All of them were food. Haha.

It was after one month being in Sandakan when he sent me Parcel Number One. I was staying alone most of the time and I often complained about being lazy to cook just for one and how I wished that I have a few thing which I can reheat whenever I feel like eating.  I told him that I couldn’t find any Brahim stuff here so he told me that he was willing to send me some. He got me about of 10 Brahim’s  rendang / kari daging and ayam, Brahim’s masak lemak gravy and Brahim’s asam pedas gravy. So while he’s at it and wanted to bermanja, I requested for some other things too. In the end Parcel Number One not only contains those Brahim stuff but also a big container of kuih bahulu, Adabi’s perencah nasi goreng, tepung goreng Kentucky, serunding daging, preserved slice prunes, Famous Amos cookies and Grey’s Anatomy the series.

Then a few months later, I was craving for some Famous Amos cookies. So he sent Parcel Number Two which contains 100g chocolate chip with pecan cookies, 100g double chocolate chip cookies and some Lindt chocolates.

When I lost my first iPhone early this year, I had to suspend my account for fear of misused by the person who’s having my phone. So since my account is registered using Azwan’s name, he was the one who had to go to Maxis in order to get the new simcard. Coincidently, I wanted to have some sushi. So in the end, not only Parcel Number Three has the simcard, but also the sushi rice and the green seaweed thing.

I guessed when people say, ‘The best way to get to the heart, is through the stomach’ is somewhat true and applicable.

Haha. :p

I don’t really like my previous post. I don’t like to read my previous post. It was up for the sake of wanting to write about raya celebration. Plus, I was feeling rather pressured for not having any news or letters pertaining the transfer. Thus, the entry became emotionless and straightforward like there was no heart and soul being put into it.

Anyway, I called up Bahagian Sekolah in Putrajaya again yesterday but was not able to get through. So after I had my afternoon nap, it came to my mind that maybe WP Kuala Lumpur has its own Jabatan Pelajaran Negeri (JPN). All this while, I thought that WPKL and WP Putrajaya fall under the same JPN which is in Putrajaya. I googled JPN WPKL and I got its address and contact number. I called them up telling them that I have not received the letter and was still clueless about my new school. The kind lady on the other line informed me of my new school.

It’s SK Convent (2) Bukit Nanas yo.

So much for wanting to be in KL la kan. Hambik kau. Rasakan. Dapat kat tengah-tengah KL.
